Boronia absolute from Boronia megastigma is one of the most chemically complex and expensive botanical perfume ingredients, with its characteristic violet-rose aroma derived principally from C13-apocarotenoid ionones — alpha-ionone and beta-ionone — formed by oxidative cleavage of carotenoid pigments in the petals.[1] Ionones display a broad range of biological functions beyond fragrance, including antioxidant activity, and beta-ionone in particular has been studied for its occurrence in multiple aromatic plants and its metabolic roles.[2]
